Description

The syrup cooker is designed to prepare sugar syrup, invert syrup, and other sweet-based products. It finds its usage in industries like confectionery, dairy, and fruit & vegetable. Syrup preparation is an essential process for producing condensed milk. The process of preparing syrup can be fully automated with this kettle.

 

This cooker can prepare various types of sugar syrups, including saturated, supersaturated, or inverted.

 

Saturated sugar syrup contains the maximum amount of sugar dissolved in water at a certain temperature. It is widely used in making sweets, drinks, and other food products.

 

Supersaturated sugar syrup contains more sugar than the maximum amount dissolved in water, and any additional sugar will not dissolve and will precipitate into a crystalline form. It can be used in cooking for preparing various confectionery products, such as caramel, icing, and gingerbread.

 

Invert sugar syrup contains glucose and fructose obtained by hydrolysis of sucrose. It is sweeter, less prone to crystallization, and has a higher viscosity than regular sugar. Invert sugar syrup is an ideal ingredient for use in a variety of food products such as creams, marshmallows, marmalades, and alcoholic and non-alcoholic drinks.

Basic model

The functional tank is a conical-bottomed atmospheric kettle designed for food production. It is equipped with an electric frame anchor agitator, a safety grill, and a safety sensor located on the hatch cover. The tank is immersed in a "jacket" which utilizes heating elements for heating on thermal oil.

This tank can be upgraded with an external forced circulation circuit, a pump suitable for hot, thick, and viscous products, and a stainless steel flow filter. It is available in three different working capacity models: 200, 300, and 500 liters. The working container, including its external decorative casings, is constructed entirely of food-grade stainless steel.

 

Operating principle

 

The kettle allows for a range of technological operations including heating, dissolving, boiling, boiling down, and concentrating solutions at atmospheric pressure. Ingredients can be loaded through the safety grate located on the upper hatch of the unit.

 

To create a thick, flavorful syrup with an appetizing yellow-brown color, a mixture of sugar, water, and additional ingredients is heated. As water evaporates, the mixture thickens into a syrup.

 

To ensure proper mixing, a special anchor mixing device is installed, which evenly distributes dry ingredients in the working fluid and facilitates heat distribution throughout the product. It is crucial to set the correct temperature and mixing speed to ensure the syrup is homogeneous and free of lumps.
