A blancher is often used in the food industry for pre-processing. It performs thermal processing for purifying products and preparing them for further processing. Blanchers ensure that most of the nutrients are preserved and retain in the meat, fish, nuts, fruits, and vegetables prior to freezing, drying, cooking or frying. Blanching equipment reduces the presence of microorganisms and removes traces of pesticides and toxins. They also serve to deactivate enzymes that could cause changes in the color, texture, or smell of products.
