They are used to massage beef, pork, fish, poultry, and similar inputs in order to make them more tender and juicier. They speed up the process for products to absorb brines or marinades, and they reduce spice consumption. The vacuum treatment protects semi-finished products from any effects of air, and therefore they retain their natural color, no harmful bacteria can form, and the shelf life will be longer.
