Blanchers
A blancher is a piece of equipment used in the food industry. It performs thermal processes for purifying products and preparing them for further processing. Blanchers ensure that nutrients are maximally retained in meat, fish, nuts, fruits, and vegetables prior to freezing, drying, or tinning. Blanchers reduce the presence of microorganisms and remove traces of pesticides and toxins. They also serve to deactivate enzymes that could cause changes in the color, texture, or smell of products.
