Autoclaves

Autoclaves (retorts, sterilizers) are a type of equipment used in the food industry. These provide sterilization and pasteurization and also shorten the time needed for production. They are used in the production of canned meat, fish, vegetables, and other preserves, various spreads, and products in their own juices. The products undergo such processing right in their container. The action of high pressure and high temperature completely eradicates any microorganisms. Autoclaves are used to preserve the color and texture of products and ensure that they retain a maximum amount of nutrients, and they allow reduced use of oil, sugar, and food preservatives.
