Its function is to hold the ham tightly by the hoof, leaving the rest of the cut free for handling, and enabling the operator to turn it in the required direction in order to:

  • Debone more easily
  • Avoid awkward postures
  • Increase productivity
  • Simplify the process of learning how to debone
  • Includes a hook for extracting the coccys
  • Facitilates gouging
  • Prevens operator fatigue and thus increases productivity
  • Produces celan deboning, without tears or deformities
