The first step is the automatic lay-down to spread the carcasses and determine the cutting lines.
The nest step is the manual or semi-automated cutting of the pig halves as part of the first phase. Serrated circular knives are used to cut meat and bones and to achieve a clean cut, good slaughter yields and less bone dust.
The DGS-HDL-PCK (Pork Circular Knife) separates the halves in shoulders, middle section and hind legs.
